Strogonoff (from the Russian строганов, stroganov) is a dish originating from Russian cuisine consisting of cubes of meat or vegetables, served in a cream sauce.
- Originally, the dish included beef cooked with mustard, accompanied by sour cream, made with milk. After the Russian Revolution, in 1917, the dish was taken to several other countries.
- In France, the recipe was modified and added champignons.
- Stroganoff had its heyday in Brazil in the 1970s, when serving the dish to guests was synonymous with sophistication.
